Cheesy Garlic Cauliflower Mash

If you follow me on Instagram you probably would've seen me post photos of my cauliflower mash before, I like to make mine with cheese and garlic, but these are optional, you can use whatever you want to flavour your mash, such as oregano or black pepper.

Cauliflower mash is so easy to make, and definitely feels a lot naughtier to eat than it is!

Here is my recipe:



Ingredients

1 Cauliflower
1/3 Cup Unsweetened Almond Milk
1 Garlic Clove, crushed (optional)
1/4 Cup Low Fat Cheddar (optional)

Makes 3 portions.

To Make

1. Chop the stalks off the cauliflower heads.
2. Boil the cauliflower until it is soft, around 5 minutes.
3. Put the cauliflower in the food processor and add the almond milk, cheese and crushed garlic clove.
4. Blitz the ingredients until a smooth mash like consistency.

And that's it, you have cauliflower mash!





Mine looks a tad watery, but thats because I accidentally added too much almond milk.

Snickerdoodle Recipe






For those of you who don't know what a Snickerdoodle is, it is an American cinnamon biscuit. It's quite similar to a sugar biscuit that has been rolled in cinnamon and sugar before baking. The cinnamon gives it a lovely festive flavour, so great for the Christmas season!

Makes roughly 24

To make, you will need:
125g butter, softened
110g caster sugar, plus 1 tablespoon for rolling
1 egg
1 tsp vanilla extract
250g plain flour
¾ tsp baking powder
Pinch of salt
1 tablespoon ground cinnamon

Cooking instructions:

1. Preheat the oven to 180 degrees.

2. Mix the butter and sugar, I use a hand mixer to make life easier. Mix until fluffy.

3. Add the egg and vanilla extract, mix until incorporated.

4. Add the flour, baking powder and salt and gently mix together to form a dough.

5. Mix the tablespoon of sugar and the cinnamon together in a different bowl. 

6. Take a small part of the dough and roll in your hands to form a ball.

7. Roll the ball around in the sugar and cinnamon mixture until coated all over.

8. Place on a baking tray. The tray doesn't have to be lined or greased, they don't stick, I promise!

9. Flatten the ball slightly with the palm of you hand.

10. Repeat until you have used all the dough, don't forget to leave a bit of space between each one as they spread. You will need at least 2 baking trays.

11. Bake in the oven for about 15 minutes, or until they feel firm around the edges.

12. Remove from the oven, leave to cool for a couple of minutes then transfer to a wire rack.

And there you have it, Snickerdoodles!

Auntie Tor's Brownie Recipe

These brownies are pretty tasty, if I do say so myself. I'm not normally the biggest brownie fan as I'm not a big dark chocolate fan, but even I like these ones and they where gone in 5 minutes when I took them to work.
I got the recipe from my aunt, who got it from a TV programme but she reckons she has tweaked it enough not be plagiarised.
These are quite quick and easy to make so here we go.

Ingredients:
225g Unsalted Butter
100g Dark Chocolate
200g Caster Sugar
4 Large Eggs
1/2 Teaspoon Vanilla Extract
50g Plain Flour
50g Cocoa Powder
Pinch of Salt
75g of Hazelnut Pieces
Makes roughly 18 large pieces.




1. Pre heat the oven to 180 degrees.
2. Melt the butter and chocolate over gentle heat.
3. In a separate bowl mix the sugar, eggs and vanilla.
4. Mix in the melted chocolate and butter with the sugar eggs and vanilla.
5. Sift in the flour and cocoa powder and mix.
6. Mix in the hazelnut pieces.
7. Pour into a pre lined baking tray.
8. To add something a bit extra, take some small hazelnut chunks (get the hazelnut, put it in a bag and bash it until you get some nice small pieces, or go to Tesco where they sell them already bashed.) and sprinkle them on top.
9. Bake for roughly 25 minutes (baking time depends on how thick your brownies are).
10. Take out the brownies, leave to cool then cut, or if you are like my boyfriend, dive straight in!
